“Anthocyanin is a pigment that's responsible for the black-purple color of forbidden rice. It's also been found to have potent anti-inflammatory, antioxidant, and anticancer effects.”

👩🏻‍🍳 I think you’ll love this! It tastes kind of similar to brown rice, and it has more fiber, protein, & iron than other rice, high levels of amino acids, vitamin E, calcium, and potassium!

Crazy, right?

 

Ingredients:

~ 1 cup washed, uncooked forbidden black / purple rice

~ 1 3/4 cups veggie broth or water

~  optional: 1 tsp extra virgin olive oil

Instructions:

~ Combine the rice, broth / water, and optional olive oil in a medium pot and bring to a boil.

~ Cover, reduce the heat to lot, and simmer for 30 minutes.

~ Remove from heat and lit it sit covered for 10 more minutes.

~ Fluff with a fork.

 

Add ins (I vamped with what I had at home!):

~ 1+ cup frozen edamame

~ 1 purple, 1 yellow, 1 orange carrot chopped

~ 1-ish medium onion chopped

~ coconut aminos + Bragg’s aminos or Tamari

 

👩🏻‍🍳 Combine the veggies in a shallow pan with some coconut aminos + Bragg’s aminos.

~ Cover, and let them cook on low, slowly until a little browned.

~ Stir them into your rice, and dig in!
