Cardamom Almond Flour Cookies

vegan gluten free naturally sweetened cardamom cookies


~ 1 cup super fine almond flour (I sifted it through a metal strainer)
~ 1/2 cup medjool dates, about 6.
soak in water for 30 min & drain
~ 1 tsp pure vanilla extract
~ 3 tbsp olive oil
~ generous 1/4 tsp cardamon powder
~ pinch of sea salt


~ preheat oven to 350 deg F
~ place the dates in a food processor & puree until you have very small pieces
~ add the remaining ingredients to the food processor & process until the dough comes together
~ divide into 12 portions and roll each portion into a ball
~ arrange the dough balls on a baking sheet about an inch apart
~ press down so they’re flat, or using the tines of a fork to make a crosshatch design
~ bake for 13-14 min until they turn lightly golden on the sides and the top
~ remove & let the cookies cool on the sheet
