Baked Naked Butternut Squash

vegan vegetarian gluten-free fiber snack side dish

1 medium size (or 2 small sized) butternut squash


~ preheat oven to 450 deg F
~ wash the butternut squash
~ cut off the little stem
~ cut in 1/2 length wise
~ scoop out the seeds…and save them! (see recipe for butternut squash seeds)
~ spray large baking pan with organic coconut oil or olive oil spray
~ bake for 60 min


I generally cut it into 4, wrap each individually or put them in separate containers, and have them as handy sweet snacks or add them into a quick meal!
