Apple Cider Brussel Sprouts with Pepitas

Ingredients

~ 1 lbs. brussel sprouts
~ 1 tbsp olive oil
~ 2-3 tbsp unfiltered apple cider vinegar
~ 2 tsp pure maple syrup
~ 1/4 cup pepitas or regular raw pumpkin seeds
~ sea salt & pepper to taste

Instructions

~ preheat oven to 400° F
~ line a rimmed baking sheet with parchment paper
~ wash, cut the little button off of the bottom of the brussel sprouts, & cut them in 1/2
~ mix olive oil, apple cider vinegar, & maple syrup together in a bowl
~ add the brussel sprouts & toss them around in the bowl until coated with that mixture above
~ season with salt and pepper
~ spread the brussel sprouts out evenly on the cookie sheet
~ roast for 25 – 30 minutes until slightly charred
~ when they’re finished, top with pepitas and serve
