Easy Healthy Cookies

vegan gluten free easy healthy cookies

 Ingredients

~ 2 cups raw oats (be sure the packaging says gluten-free if you have allergies)⁣
~ 1 ripe banana mashed ⁣
~ 1 cup raw almond butter (I used crunchy because that’s my favorite)⁣
~ 1/4 cup pure pumpkin purée⁣
~ 1/4 cup pure maple syrup⁣
~ 1 tsp cinnamon ⁣
~ 1 tbsp hemp seeds⁣
~ 1/2 cup organic raisins⁣
~ 1/2 cup cacao nibs⁣
~ 1/2 tsp kosher sal

Instructions

~ preheat oven to 325°F⁣
~ place all of the ingredients in a bowl & mix until thoroughly combined ⁣ **chill dough in the fridge for 30-60 minutes**⁣
~ line cookie sheets with parchment paper, or spray with organic coconut or olive oil spray ⁣
~ use a 1/4 cup ice cream scooper or 1/4 measuring cup, place mixture on cookie sheet, & use your palm to gently press into 1 inch thick circles⁣
~ bake for 18-20 min or until starting to turn golden⁣
~ cool on baking sheet for 15 minutes & then transfer to rack to cool completely
