Easy Healthy Cookies

vegan gluten free easy healthy cookies

 Ingredients

~ 2 cups raw oats (be sure the packaging says gluten-free if you have allergies)ā£
~ 1 ripe banana mashed ā£
~ 1 cup raw almond butter (I used crunchy because that’s my favorite)ā£
~ 1/4 cup pure pumpkin puréeā£
~ 1/4 cup pure maple syrupā£
~ 1 tsp cinnamon ā£
~ 1 tbsp hemp seedsā£
~ 1/2 cup organic raisinsā£
~ 1/2 cup cacao nibsā£
~ 1/2 tsp kosher sal

Instructions

~ preheat oven to 325°Fā£
~ place all of the ingredients in a bowl & mix until thoroughly combined ā£ **chill dough in the fridge for 30-60 minutes**ā£
~ line cookie sheets with parchment paper, or spray with organic coconut or olive oil spray ā£
~ use a 1/4 cup ice cream scooper or 1/4 measuring cup, place mixture on cookie sheet, & use your palm to gently press into 1 inch thick circlesā£
~ bake for 18-20 min or until starting to turn goldenā£
~ cool on baking sheet for 15 minutes & then transfer to rack to cool completely
