Easy Healthy Cookies

Ingredients
~ 2 cups raw oats (be sure the packaging says gluten-free if you have allergies)
~ 1 ripe banana mashed
~ 1 cup raw almond butter (I used crunchy because that’s my favorite)
~ 1/4 cup pure pumpkin purée
~ 1/4 cup pure maple syrup
~ 1 tsp cinnamon
~ 1 tbsp hemp seeds
~ 1/2 cup organic raisins
~ 1/2 cup cacao nibs
~ 1/2 tsp kosher sal
Instructions
~ preheat oven to 325°F
~ place all of the ingredients in a bowl & mix until thoroughly combined **chill dough in the fridge for 30-60 minutes**
~ line cookie sheets with parchment paper, or spray with organic coconut or olive oil spray
~ use a 1/4 cup ice cream scooper or 1/4 measuring cup, place mixture on cookie sheet, & use your palm to gently press into 1 inch thick circles
~ bake for 18-20 min or until starting to turn golden
~ cool on baking sheet for 15 minutes & then transfer to rack to cool completely
