Overnight Pumpkin Chia Pudding
So many of us try all the “right” habits … perfect breakfasts, rigid food rules, high-energy workouts … yet we still feel disconnected, uninspired, or stuck.
That’s because the missing piece isn’t another strict habit. It’s the alignment behind it … all the layers beneath.
With this recipe, we’re doing food differently. We’re moving away from “I should eat this” and into “I choose this, because it speaks to how I want to feel.”
🤍 1/2 cup full-fat coconut milk + water = healthy fats + ease
🤍 1/2 cup pumpkin puree = fiber, warmth, resonance (yes, pumpkin is a low-glycemic-load hero)
🤍 Chia seeds = soak overnight, create texture, offer omega-3s, fiber, antioxidants
Whisk it together, rest it overnight, eat it in full awareness & in-joy every bite 🫶🏼 because real shifts start when we slow down to show up for ourselves.

Overnight Pumpkin Chia Pudding 🧡
1/2 cup full-fat coconut milk
1/2 cup water
1/2 cup pumpkin puree (1 ingredient)
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 cup whole chia seeds
sea salt to taste
honey or maple syrup to taste
NOTE🧡: I added the spices above, and then added more (including pumpkin pie spice) to taste/smell
Instructions:
In a medium bowl, whisk together the coconut milk, water, pumpkin puree, cinnamon, ginger, nutmeg, sea salt, and chia seeds.
Pour the pudding into a glass container or jar, cover and refrigerate overnight.
To serve, stir well then sweeten to taste with honey or maple syrup. Spoon into 2-3 small serving dishes and in-joy 🤩
