Corn Bread

Ingredients
~ 1&1/4 cups spelt flour (you can use brown rice flour for gluten-free)
~ 1 cup yellow cornmeal
~ 2/3 cup coconut sugar
~ 1 tsp salt ~ 1 tbsp baking powder
~ 1&1/4 cups unsweetened almond milk
~ 1/3 cup olive oil (or replace the oil with unsweetened apple sauce)
Instructions
~ preheat oven to 400°F
~ lightly spray an 8×8 pan or a 9 inch round pan with organic olive oil or coconut oil spray
~ in a large bowl, combine the spelt flour (or brown rice flour), cornmeal, coconut sugar, salt, & baking powder…stir
~ now pour in the almond milk and olive oil (or apple sauce), stir until well combined ~ pour into prepared pan
~ bake 20-25 min until a toothpick inserted comes out clean
