Corn Bread

vegan gluten free corn bread side dish

Ingredients

~ 1&1/4 cups spelt flour (you can use brown rice flour for gluten-free)⁣
~ 1 cup yellow cornmeal⁣
~ 2/3 cup coconut sugar⁣
~ 1 tsp salt⁣ ~ 1 tbsp baking powder⁣
~ 1&1/4 cups unsweetened almond milk⁣
~ 1/3 cup olive oil (or replace the oil with unsweetened apple sauce)⁣

Instructions

~ preheat oven to 400°F⁣
~ lightly spray an 8×8 pan or a 9 inch round pan with organic olive oil or coconut oil spray⁣
~ in a large bowl, combine the spelt flour (or brown rice flour), cornmeal, coconut sugar, salt, & baking powder…stir⁣
~ now pour in the almond milk and olive oil (or apple sauce), stir until well combined⁣ ~ pour into prepared pan⁣
~ bake 20-25 min until a toothpick inserted comes out clean⁣
