3-Ingredient Peanut Butter Cookies

🍪Try these cookies the next time you're craving something sweet and want to stay aligned:
Ingredients
~ 1 cup peanut butter (look for just peanuts, or peanuts + salt)
~ rounded 1/3 cup coconut sugar, stevia, or monk fruit
~ 1 chia egg (1 tbsp chia seeds + 2.5 tbsp water, let sit to gel)
Instructions
Preheat oven to 325°F
Mix everything together
Roll into balls + place on parchment-lined baking sheet
Press down with fork (classic PB cookie style)
Bake 15 min, or until lightly golden
Cool completely before sneaking one 😬
I keep them in the fridge …
Yields about 20 cookies
