I’m SUPER specific about how I’ll eat bananas 😬 they have to be juuuuust turned yellow, past green, and there’s like a 1 hour window where I like them lol

 

Banana bread is awesome, but can get tired or cliche after a while.

I had quick oats, these bananas, walnuts, and Hu chocolate chips (‘hu’ doesn’t need chocolate too? just sayin)

 I googled ‘banana walnut oatmeal recipe’ and this one popped up with good reviews!

Ingredients

  •  2 medium ripe bananas, mashed

  •  1 cup of uncooked quick oats (GF if needed)

  •  1/4 cup crushed walnuts

  •  (optional) I added Hu brand chocolate chips & salt to taste

 

Instructions 

  •  Preheat oven to 350°F.  Spray a non-stick cookie sheet with cooking spray or use a silpat

  •  Combine the mashed bananas and oats in a bowl. Add salt if using. Fold in the walnuts (& optional chocolate chips)

  •  Place a tablespoon of each on the cookie sheet.

  •  Bake 15 minutes. Makes 16 cookies.

  

👩🏻‍🍳 Leftover cookies can be frozen; let them cool then wrap tight in plastic wrap and freeze. Thaw or heat in microwave a few seconds before eating.
