
Black Bean Lime Salsa (dip ... salad …)
This took no time to make! I ate it as a salad-y type meal on top of some sprouted brown rice…its was filling, has great protein, fiber, healthy fat, it’s super full of flavor, and has a bit of a kick with the cayenne which I personally love a lot 🔥
Here’s what’s in it ~
Ingredients:
~ juice of ½ lime
~ 2 cloves garlic, finely chopped
~ 1 tomato chopped
~ ½ onion diced
~ 1+ cup black beans
~ 1 cup coarsely chopped or torn cilantro (you could use flat leaf parsley too)
~ 1 tbsp balsamic vinegar
~ 1 tbsp hemp oil (I used MCT oil & it worked well!)
~ ½ tsp cayenne pepper
~ ¼ tsp sea salt
Instructions:
~ in a bowl, combine all ingredients
~ allow to sit for a few hours at room temperature so that all the flavors infuse
~ keep refrigerated for up to a week
~ makes about 2 cups
