🌿 Apple cider roasted brussel sprouts with pepitas

 

🥣 Ingredients: 

~ 1 lbs. brussel sprouts

~ 1 tbsp olive oil or clean veggie broth

~ 2-3 tbsp unfiltered apple cider vinegar

~ 2 tsp pure maple syrup

~ 1/4 cup pepitas or raw pumpkin seeds

~ sea salt & pepper to taste

 

🥣 Directions:

~ preheat oven to 400° F

~ line a rimmed baking sheet with parchment paper

~ wash, cut the little button off of the bottom of the brussel sprouts, & cut them in 1/2

~ mix olive oil (or veggie broth), apple cider vinegar, & maple syrup together in a bowl

~ add the brussel sprouts & toss them around in the bowl until coated with that mixture above

~ season with salt and pepper

~ spread the brussel sprouts out evenly on the cookie sheet

~ roast for 25 - 30 minutes until slightly charred

~ when they’re finished, top with pepitas and serve!
